Coronary Heart Disease Reversal and Nutrition - Part II
In the first part of this series, we mentioned a study that had looked at sets of populations who experienced less than 1/10th the incidence of coronary heart disease that we have come to experience in our modern western civilizations.

Of course, this would have to be Dr. Collin Campbell's famous work: "The China Study". The New York Times has coined it "The grand Prix of Epidemiology". If you happen to have a bit of a problem with either Heart Disease or your weight and were allowed only one book to read, this is the book to read.

Scientific literature will also refer to
· The China Project or
· The China-Cornell-Oxford Project

In fact the book is about the China Project. The project was born
in 1980. The idea was to conduct a vast and lengthy scientific
study of some populations in China who were reported to have cancer rates and
CHD rates much lower than those found in America. The National Institutes of Health (NIH), The American Cancer Society and The American Institute funded the study for Cancer Research.

Aside from the fact that cancer was much lower in the populations studied, of great interest to us in the present discussion are these findings:

· The rate of heart disease was incredibly low.
· The average blood cholesterol level was almost 90 mg/dl lower than that of the average American (at 215 mg/dl)
· Excess weight was very rare.
· One striking difference between the dietary habits of these rural Chinese vs. the average American: their diets were very low in fat and very high in dietary fibre. Plant-based protein derived from beans and soy was more prominent than animal-based protein such as beef or pork.

In all, the almost three decade long project produced close to 8,000 statistically interesting variables. Of course, we are not to present all of them in this article. The fate of the people migrating from these areas to America was later scrutinized. As the migrants arrived here and started to adopt the western style diet…the heart disease rate went up, so did diabetes related complications and so did the migrant's weight.

From the above facts, one can start to understand the rationale behind some the methods proposed by the heart disease specialists we mentioned in part I. It is for those very same reasons that the Chef Goodwizzard TM recipes that are proposed to cardiac, diabetics or people struggling with a weight problem, rely very heavily on soy products.

When those diets were adapted for Americans and other westerners, the results were as expected:

· There was an associated decrease in heart event rates and…sometimes regression of the disease.
· Diabetes related complications decreased significantly.
· Weight went down and stayed down…"on its own"!

Of course, The China Project was pioneering work and there are new findings to take into consideration when planning meals. However, the basic principles are very much the same.
