1- How to Extract the Flavor, preparing the vegetables (Rapid oil infusion)

There are substances (like tasty molecules) that dissolve better in oil and others that dissolve better in water. The same is true for the aromatic molecules that are responsible for the flavor of a dish. This knowledge can do wonders as to how the dishes you cook will taste. Let's start by infusing the small amount of oil we are going to use with the flavor of the spices. First, using an oil sprayer, spray a fine mist of oil at the bottom of a pan, baking tray or microwave-proof vessel. Sprinkle with the crushed garlic, spices and herbs. Spray again with a fine mist of oil. If not using a sprayer, pour a very small quantity of oil in the pot and sprinkle half of the spices and herbs in the oil. Let stand for ten minutes so the herbs are impregnated with oil.Add the chopped onions, chopped spinach, chopped green pepper and sliced mushrooms on top. Spray again with a fine mist of oil. Stir thoroughly and heat at low intensity until the veggies are half cooked. You will notice that this starts to smell real good ...so will the other members of your household. Set the vegetables aside.

2- Preparing the crust.
Depending on the type of crust or dough you have purchased, and depending on the cooking method you choose to use, you will need either: a flat pizza pan for homemade dough, a pyrex bowl can also do the job, as you saw in the above video, or some kind of flat tray for the toaster-oven if you chose the pita bread. The ready-made pizza crust can be cooked with either of the above. Spray a very fine mist of oil on the tray. Sprinkle a very small quantity of the spices and herbs on it and spread evenly. Place the crust or dough on the tray. Repeat the process, a very fine mist of oil, sprinkle some spices and herbs evenly. With a spoon, put the pizza sauce in the middle of the crust and distribute evenly, stopping at about ¾ inch from the edge.

3- Adding the pizza soy-pepperoni and the veggies.
Spread about ¼ of the low-fat shredded cheese on top of the sauce. Then distribute the soy-pepperoni or the thinly sliced turkey over the cheese. With a spoon, spread the half-cooked veggies you had set aside on top of the pepperoni. Spread the slices of tomato and cover with the remaining ¾ of the cheese. Sprinkle again with the ground pepper, oregano and basil.

4- How to add a volume of fiber (Weight Loss and Weight Control Versions).

In the weight loss and control version, a volume of vegetables (spinach) with a high content of dietary fiber is substituted to a volume of pasta. The reasons are explained in the health notes on the right. The quantity of cheese was also reduced.
5- Cooking your pizza!
This is the tricky part! If you are making pizza for the first time, you will have to peek through the window and watch how things are going. Put the pizza in the pre-heated oven or toaster oven, set at the temperature recommended by the makers of the dough or crust you bought. As a rule of thumb, you keep it cooking until the cheese starts to exhibit golden or brown spots. If using dough, you may want to bake first and broil after.

5- Serving

Quantities will vary according to your size, gender and daily energy requirements. Type 1 and 2 diabetic patients must adjust the quantity of carbohydrate (size of the crust) used according to their own metabolic ability to process carbohydrate over time. Serve with a Mediterranean salad and maybe a bit of red wine.

1- Why soy-based pepperoni instead of the regular pizza pepperoni?

A quick comparison of the nutritional content of soy pepperoni with that of the regular one will show that meat-based peperoni, like any meat-based sausage, contains an incredible amount of fat, especially the bad saturated fat. The cholesterol values are also very high. This is a no-no proposition for people who suffer from angina, atherosclerosis or just had a heart attack. Soy offers the same protein or amino acid content as meat, without the high fat content. It is also cholesterol-free. Its taste is remarkably similar to that of regular pizza pepperoni. If you are not sure you want to try it, sliced turkey breast would provide a lean source of protein.

2- Why an oil sprayer and why use such small amounts of oil?

The oil sprayer is used so as to keep the use of fat to a minimum. Both canola and olive oil are available in spray cans at your supermarket. The diets that are documented as reversing heart disease and causing coronary plaque to regress is very-low fat, at 10 to 15% of calories coming from fat. Weight loss seekers and weight watchers should refrain from using too much fat, as any fat carries more than twice the calories per gram that carbs and protein carry, 9 Kcal for fat vs. 4 Kcal for carbohydrate or protein.

4- Why add spinach, or fiber-rich vegetables and FiberSure or Metamucil to the mix?

Spinach, besides containing healthy nutritional elements, has also high fiber content. It is used in this weight loss recipe to reduce the reduced volume of dough and the portion of cheese and thus reduce the total number of calories. This will also procure a feeling of satiety and will keep you from getting hungry. Whether a diabetic or a weight watcher, spinach is indeed "good for you". A small quantity of psyllium husk will increase the fiber content of the recipe and will be beneficial to diabetics. It will also make you feel full longer, something weight loss seekers will appreciate in a recipe. Note that psyllium husk (Metamucil) also helps lower cholesterol slightly.

5- Why fat-free cheese instead of regular cheese?

Cheese normally has a very high saturated fat and cholesterol content. ...Not ideal for heart and diabetic patients or weight conscious people. In this American-style pizza recipe, the fat-free cheese is a perfect choice. Use in moderation on account of the high sodium / salt content. . People who have some degree of intolerance to lactose and dairy products and strict vegetarians or vegans may want to use soy-based cheese products.

This recipe is NOT your traditional American-style pizza recipe, like the one you would find at your pizza parlor. This recipe was created for patients who must modify their diet after having had a heart attack, who have been diagnosed with angina, atherosclerosis, Type 1 diabetes, Type 2 diabetes or are dieting in order to lose weight. This is a modified recipe designed to provide a high quality nutritional intake. A strict definition of "Pizza Americana" would be hard to give, since it would keep changing as you walk from one pizza parlor to another. It would have to be thought of as an average or a hybrid of the different variations that are preferred by the American consumer. There are many trends such as the Chicago, the New York, the Boston and the vegetarian pizza and countless others. The same phenomenon happens in Italy. A Roman pizza differs from the Calabrese, the Sicilian or the Napolitano. This recipe was made for you to modify, if you must. Note however that the nutritional values and virtues will change accordingly. Use the nutritional analysis features of your recipe software to check on the results after you modified it. You would want to make sure that you still have a healthy, low-fat and low-cholesterol pizza. – NGBeditor. They would also want to keep the vegetable content high, so as to provide high fiber content. The above is a plant-based (soy) pizza recipe. Soy provides the same proteins or amino acids as meat. To bring the total fat content down to 10% of calories, one can use an oil sprayer, available in most good drugstores. Soy pepperoni (Boca's pizza pepperoni) is available in most large grocery stores but may be harder find in at "discount" banners. Drained red kidney beans could also be used as a source of protein, when combined with unrefined wholegrain cereals, such the whole wheat dough. Do not try to replace the soy pepperoni with meat-based sausages, as they are all very rich in saturated fat. They do NOT qualify as heart-friendly foods. Aim for lower blood cholesterol. Since coronary heart disease is a common complication of diabetes, keeping a low fat value for this pizza is important. Weight Loss, Control and Maintenance Diets / Notes: Look out for unwanted hidden calories, in all meal plans. The cardio version was used as a base. The weight loss variation of this pizza recipe aims at reducing the caloric intake while maintaining adequate nutritional values. The amount of oil was slightly reduced. So was the amount of pepperoni. 1/4 cup of chopped broccoli was added to increase the feeling of satiety. Using pita bread or dough made with unrefined whole grains also helps a lot. Balance with accompanying dishes so as not to exceed your set caloric intake. Use an oil sprayer similar to the one shown in the "directions", in order to keep the caloric intake down. Consequently, this makeover recipe does not list any sausage and includes whole-grain crust or dough, healthy and vegetables for fiber content.
