As always, reading the label will be important, some brands contain more sugar than others. The same goes for the choice of a flavour, some have a higher sugar content. Make sure to use a wholewheat pancake to slow down the absorbtion of the the glucose a bit. Including fiber (a salad?) in the meal will be a great idea.
Who says you can't enjoy a good satisfying dessert ? Make sure to choose a brand or flavour with a lower carb content and a low fat content. Favour a bigger ratio of field berries, they have little in the way of fat and have no added sugar.
Lay a 6 to 8-inch whole-wheat pancake flat on appropriate surface. With a spoon, spread some fat-free yogurt on top making a rectangular strip 2 inches by 8 across. In a similar manner, spread some low-fat dairy-free ice cream on top of the strip ( about 1/4 inch in thickness).
Cover the strip with the thawed field berries. Flip one of the sides on top and roll in a wrapping manner.
Serve immediately ( do not prepare in advance, after a while the pancakes would absorb water and become soggy )
Cooking Variations
Replace berries with summer fruit salad or other appropriate combination of fruits. People taking Lipitor or similar statin must avoid grapefruit while on this medication.
One can also use thin wholewheat pita bread or other appropriately shaped source of wholegrain carbs.
